José Kobos is the chef and owner of the most exclusive Japanese sushi bar in Madrid. With only 9 seats and a single tasting menu, Ebisu by Kobos serves Edo-style sushi following the same methods used at Ebisu Endo (hence the name).
José learned everything there is to know about sushi from the acclaimed itamae Endo Norihito, working by his side in Tokyo. If it weren’t for the pandemic, José would probably still be in Japan. Instead, he returned to Spain in 2020 and started his own business – first as a delivery, then a speakeasy, and finally, a full-fledged restaurant with a 16-step omakase.
Eel, tuna, octopus, kinmedai, and many other types of fish used since the Edo period, are served at Ebisu by Kobos deliciously fresh, grilled, or pickled with vinegar. The menu is expertly paired with sake, wine, champagne and even jerez. The whole experience is completed with the sounds of flamenco, written and performed by José’s uncle, Gerardo Nuñez.
